So I’ve recently started working towards 2 goals: cooking more often and keeping up with a keto diet. I was originally so intimidated at the prospect of giving up carbs because let’s be honest, we all love them. But I’m happy to say that it’s been smooth sailing so far! Here’s a quick & easy dinner that I put together tonight, thanks to Pinterest inspiration and figuring out what ingredients I could find in my kitchen. After adding up all of the ingredients in the app Carb Manager, 1 serving has 2 net carbs, 40g fat, 31g protein, and 502 net calories. Hope you all enjoy!
INGREDIENTS: (makes 6 servings)
– 2lbs ground beef (I use 85% lean)
– 4oz Philadelphia Original Cream Cheese
– 1 cup shredded cheese (almost anything will go)
– 2.5 tbsp garlic powder
– 1/2 tbsp chili powder
– 1 tbsp paprika
– 1/2 tbsp cayenne red pepper
– 1/2 tbsp pepper
– 1 tbsp oregano
– 1 cup water
– Olive oil spray for skillet/baking dish
1: Preheat oven to 400 degrees F. Spray skillet and baking dish with olive oil. Set the baking dish aside, and heat skillet on medium/high heat.
2: Add the ground beef to the skillet. I also like to add a cup of water to help break the meat up a little quicker. Cook and stir until brown, then drain the beef.
3: After lowering the heat a little, add in the seasoning and cream cheese, and mix until it melts together. Feel free to adjust the seasonings to your personal taste!
4: Turn off heat, mix in 1/2 cup of shredded cheese, then transfer to the baking dish.
5: Sprinkle the remaining shredded cheese on top, and then pop it into the oven for 5-8 minutes, or until cheese is melted. I also topped with a little oregano, but again – whatever tastes the best to you!
Now this may not be the fanciest or prettiest dish, but it’s quick, easy, and delicious – especially if you’re new to keto like me!
